If you understand me, you’ll understand that Girl Scout Samoa biscuits will be my absolute favorite. And eating them suspended just makes them much better! I made my own copycat Samoa Truffles that possess the identical great flavor as the biscuits (without damaging any biscuits in the procedure, haha)!
Well, today’s Caramel Apple Ring Pops catch the delicious chocolate, caramel, and coconut flavor as the biscuits, but instead of shortbread…I used Crunch Pak Apple Rings!
Recall before this week I shared this recipe to get ? Such a super easy dessert recipe, however it is quite impressive to consider! I then shared a superb that is ideal for the holiday season. Today’s Caramel Apple Ring Pops are just downright delicious and fun. Make them as an afternoon snack for the children, or mix some up for a bake sale. A few notes make Caramel Apple Ring Pops:
- as you’re restarting your apples, then get your coconut! I do so by spreading out my coconut (about 1 cup of sweetened, shredded coconut) onto a large baking sheet (with sides). Bake in a 400 degree oven for around 10 minutes, even giving it a stir with a flat spatula every 2-3 minutes. You want it to be lightly browned. Be Mindful. Once it begins to brown, it may go from toasted to bloated extremely fast.
- I used an entire bag (12 oz) of all . Any variety would work great with this recipe, just choose if you would rather sour, sweet, or a mixture of both! Maybe pick up an extra bag so you’ve got you to SNACK ON while you create these fun treats! As you can see in the photographs I used sucker sticks. Don’t be like me anymore. If it’s possible, use wooden popsicle sticks rather. Though the sucker sticks are adorable, the apples made them soft after the sticks had to be removed. Utilize the wooden popsicle sticks (they’re cheaper too)!
- Unwrap about 25-30 caramels and set them in a microwave safe bowl. Heat for around 90 seconds, stirring every 30 seconds. Fold on your toasted coconut and this can be your “topping.”
- If applying for a bake sale, then wrap in a transparent deal bag and tie with ribbon. ENJOY!

Capture the delicious chocolate, caramel, and coconut flavor of your favourite cookie inside this fun, Caramel Apple Ring Pops recipe! Great for dinner, snacking, or bake sales!
Ingredients:
- 1 cup sweetened, shredded coconut
- 1 package (12 oz) Crunch Pak Apple Rings (any variety)
- 1 package (8 oz) caramels, unwrapped (approx 25-30 candies)
- 1 package (10 oz) dark chocolate melting wafers
Directions:
- Put coconut 10x15x1-inch baking sheet. Spread out evenly and bake in a 400°F oven for around 8-10 minutes. Stir coconut every two minutes, and cook just until lightly browned.
- In a microwave safe dish, melt unwrapped caramels for around 90 seconds, stirring every 30 seconds, until smooth. Fold in the toasted coconut.
- Put apple rings on a piece of parchment paper. Push a popsicle stick into one end, lightly, so that it is secure. Set aside.
- Melt chocolate wafers in microwave safe dish for 90 seconds, stirring every 30 seconds, until smooth. Pour cocoa into a shallow dish, like a pie plate.
- To build, use 1-2Tbsp metallic scoop and scoop some of those caramel coconut mix. Drop onto the center of an apple ring. With your finger tips, lightly spread it out. Repeat until all apple rings come down.
- Dip base of apple ring into the melted chocolate, allowing the chocolate to come up the sides into the caramel centre (you want it to touch with the caramel as this helps secure everything). Place apple pop back onto parchment paper. Repeat for several of the earrings.
- With the remaining chocolate, then spoon into a small ziploc bag. Snip off the floor corner and then scatter over the top of the apple pops. Let me set about 10 minutes. ENJOY!
